CJ Jackson

CJ is Creative Consultant at The Seafood School in Billingsgate. CJ has been in the food industry as a trainer, demonstrator, presenter, food writer and concept and product developer for over 35 years. Having worked at both The Cordon Bleu School and then Leiths School in London CJ became a freelance consultant in 1998 and worked creating short training programs for those entering the food industry at retail and development levels. She has also worked for a number of high profile customers including M&S, Waitrose, Asda, Morrisons an Good Food Magazine. CJ has published a number of books and has worked with both Dorling Kindersley and Phaidon specifically about seafood. Her first book was published in 1995 - The LEITHS Fish Bible (with C Waldergrave) followed in 1998 by The LEITHS Seasonal Bible (with B Kassapian) CJ joined the Seafood School as the CEO in December 2005 and managed all aspects of the school from charitable activity through to developing the courses and creating programs at the school. Cj has worked closely with Seafish (the industry authority) as an ambassador and forged close links with Seafood Scotland.
