Masterclasses at Aldeburgh Food & Drink Festival are private cookery lessons led by one of the visiting celebrity chefs.
The Masterclasses are held in a specially set-up kitchen, for a maximum of 20 participants.
This year’s Masterclasses will be held in the Riverview Restaurant, above the Riverview Café.
Each participant will be provided with a workstation with all the ingredients and equipment they need, and our dedicated team of cookery specialists will be on hand to assist at any time.
At the end of the class, participants will be sent away with a bespoke festival apron and anything they’ve made plus recipe cards where relevant.
Please note that if you wish to attend a Masterclass, you must purchase a ticket to the festival and a Masterclass ticket, separately.
Join Rowen Halstead, a Michelin-trained chef and keen advocate for sustainable and zero-waste cooking practices, as you discover the tricks and tips to master food waste at home.
Explore the ancient art of preservation and fermentation as a practical solution to the pressing issue of food waste. This hands-on workshop will introduce you to the principles of lacto-fermentation, showing you how to extend the shelf life of seasonal vegetables, enhance gut health, and elevate the flavour of your everyday cooking.
Join Pump Street Workshop’s David Wright and learn the secrets to a proper homemade sourdough crumpet.
David will demonstrate how to make the batter and then you’ll cook some using batter prepared in advance. You will leave with a recipe, crumpets and the knowledge to make them at home.
Join the brilliant Louis Sare from The Suffolk in Aldeburgh for a lively cocktail masterclass, where you’ll learn how to make some of their signature serves – including the Oyster Martini, a heady blend of Fishers Oyster Gin and Vermouth, and the zesty Sea Buckthorn Margarita. You’ll also pick up expert tips from the bar team on how to create simple, delicious cocktails at home – and leave with a mini cocktail to take away.
In this masterclass Rachel de Thample, award-winning author and fermentation expert from River Cottage, celebrates this revered ingredient with an array of fermented delicacies.
Just one teaspoonful of honey – a mere 5g measure – is the lifetime’s work of a dozen bees. Considering their daily forage during a short lifespan – each bee tapping nectar from hundreds of flowers across a vast and varied landscape and heaving it back to the hive to create those drops of gold – it’s possible we take honey for granted. The magic trick is to apply honey in a way that makes it matter more.
Come along to this wildly unique workshop.
Join Dave in this Pasta masterclass, where you will learn how to make pasta dough and roll it, master the art of three different shapes, and add Unruly Pig sauces and fillings to plate up and taste at the end of the class.
The Unruly Pig in Suffolk has won first place for the past two years running in the UK Top 50 Gastropubs Awards, and the kitchen is led by chef-patron Dave Wall. Before joining The Unruly Pig, Dave worked for Gordon Ramsay at both Claridge’s and The Boxwood Café. He then cooked at the iconic London restaurant Bibendum before returning home to Suffolk. He has been head chef at The Unruly Pig from its opening in April 2015.
Join Rowen Halstead, a Michelin-trained chef and keen advocate for sustainable and zero-waste cooking practices, as you discover the tricks and tips to master food waste at home.
With an estimated 40% of all food produced globally going to waste, it is essential that we begin to rethink our relationship with food. In the UK alone, 25 million slices of bread and 2.3 million glasses of milk are discarded every day.
In this session, Rowen Halstead will demonstrate how to unlock the hidden potential of food waste, transforming everyday leftovers into innovative drinks and homemade cheese that showcase both creativity and sustainability.
This hands-on, story-led cooking workshop explores the rich, aromatic world of spices – their history, flavour profiles, cultural significance, and transformative power in cooking.
Participants will gain confidence in using spices to build depth, complexity, and personality in their dishes through spice tempering, blending and cooking traditionally spiced small dishes.
